Can you order it 208 3 phase On power on the oven

It actually depends how you are asking to connect up to 208VAC, which is almost always 3-phase. Normal households operate on 240VAC Single phase where your L1 & L2 are 180 degrees out of phase. This provides for 240VAC measured between L1 & L2. A lot of commercial/industrial areas have 208VAC 3-phase, this just means you now have L1, L2, and L3 lines coming into your power distribution. If you wire between L1 & L2, or L1 & L3, or L2 & L3 your RMS value measured between any of two of those load lines will be 208. The reason it is 208VAC and not 240VAC is because the 3phase line voltages are 120 degrees out of phase from each other, unlike the 240VAC that is 180 degree between the two line voltages. Within this oven the only items you have running off of 208/220/240 are the 3 baking elements that are more than likely regular range oven elements, but have not been able to get any confirmation from Eastwood and two relays to control when 208/220/240 is connected. The PID controller for temperature, the fan blower motor, status/on LED’s, and relays solenoid are operated from 120VAC. Since we are not dealing with any inductive loads we don’t need to worry differentiating between single phase (240) and 3 phase (208) for this application. What we are connecting are two of the 3 phase line voltages to resistive loads (3 baking elements), each element measures about 18 ohms of resistance and will be drawing about 11.5A producing about 2400 watts. So multiplying this times 3 provides us with a total of 7200 watts when the elements are powered on. This means the ovens will provide about 20% less wattage (current draw) when connected up to 208VAC. Eastwood claims the oven will get up to operating temperature in around 15 minutes, when connected to 240VAC. I would think when connected to 208VAC your time would increase to around 20-30 minutes to come up to temperature. Even GE has on their support site has posted the following, “ELECTRIC WALL OVENS & RANGES - 240, 220, AND 208 VOLT ELECTRICAL SUPPLY Most cooking appliances are rated at 240 volt. The nominal voltage is 240 volt, but homes may have 208V, 220V, or 240V power supply. Any appliance that is rated for 240 volts and can also be used on a 220V or 208V outlet. “

When wiring this oven, does it need a neutral wire or can it have 2 hots and a ground?

The 4 wire circuit is needed to provide a neutral leg for the controls to operate properly. There are alternatives that a professional electrician may be able to recommend, but We highly recommend the use of a 4 wire circuit though.
